Creamy Dill Chicken

  • 4 Bone-In Chicken Breasts
  • 4 Cloves Garlic
  • 1 Onion, Quartered
  • 8 Carrots
  • 8 Baby Red Potatoes
  • 8 Yukon Gold Potatoes
  • 4-6 Sprigs Fresh Dill
  • 4 Tablespoons Butter
  • 1 Cup Heavy Cream
  • 3-4 Cups Chicken Bone Broth
  • 2 Tablespoons Corn Starch Plus Cool Water
  • Salt and Pepper to taste

Directions:

  1. Preheat oven to 400 degrees.
  2. Place chicken breasts in an oven-safe dish and top with salt and pepper. Place in oven for 30-40 minutes until chicken is good and browned (this is important).
  3. Take out of the oven and add chicken bone broth, butter, peeled garlic cloves, and dill sprigs. Reduce heat to 350 degrees, cover and bake for 2ish hours (depending how much time you have). The longer the chicken bakes, the more tender and flavorful.
  4. Make cornstarch and water mixture, whisk in broth to thicken. Add more or less for desired consistency. The sauce will thicken more during baking.
  5. Add carrots, potatoes, heavy cream, salt and pepper and bake for another hour or so.
  6. Remove from oven and stir, making sure all of the good, browned bits are scraped from the sides. This adds so much flavor. Add extra salt and pepper if needed.
  7. Enjoy!
