The Secret to a Perfectly Seared Sirloin

One of the best ways to cook sirloin is pan-searing. This method locks in the juices, creating a beautifully caramelized crust while keeping the inside tender and flavorful. Here’s how to get it just right:

  1. Bring the Steak to Room Temperature: Take the sirloin out of the fridge at least 30 minutes before cooking. This ensures even cooking and helps achieve a beautiful sear.
  2. Pat It Dry & Season Generously: Moisture is the enemy of a perfect sear. Pat the steak completely dry, then season it liberally with salt, pepper, and any other desired spices (garlic powder and smoked paprika work beautifully).
  3. Use a Hot Pan & High-Quality Fat: A cast-iron skillet (my preference) or stainless-steel pan works best. Stay away from non-stick pans as they don’t sear well (and are full of icky chemicals!). Heat the pan until it’s screaming hot, then add a generous amount of high-smoke-point oil like avocado oil or ghee.
  4. Sear Without Moving: Place the steak in the pan and let it sear for about 3–4 minutes without touching it. This allows a golden-brown crust to form.
  5. Flip & Baste: Flip the steak and add a dollop of ghee, crushed garlic, and fresh herbs like rosemary or thyme. Spoon the melted ghee (clarified butter) over the steak to infuse it with rich, aromatic flavor. Depending on your family’s preference, sear steak for an extra minute or two for medium to medium well. I’m a medium well girl, don’t hate me for that😂
  6. Rest Before Slicing: After cooking, let the steak rest for at least 5 minutes. This allows the juices to redistribute, keeping the meat tender and juicy.

These roasted green beans come together in no time and complement the sirloin beautifully. The trick is to cook them at a high temperature so they blister slightly, developing a caramelized exterior while staying crisp inside.

  1. Choose Fresh Green Beans: Look for firm, bright green beans without any wrinkles or soft spots.
  2. Toss in a Flavorful (& Healthy) Fat: Olive oil or avocado oil works well. Coat the green beans evenly so they roast rather than steam. Make sure your oil is compatible with a high roasting temp.
  3. Use High Heat: Roast them in a 425°F oven for 17-22 minutes until a slight char is present.
  4. Season Simply but Well: Garlic, sea salt, black pepper, and a squeeze of lemon (if you wish) at the end bring out the best flavors.
  5. Don’t Overcrowd the Pan: If they’re too close together, they’ll steam instead of roasting. Give them space!

Pan Seared Sirloin With Blistered Garlic Green Beans Recipe


Recipe

  • 4 Sirloin Steaks
  • 1 Pound Fresh Green Beans
  • 4 Cloves Garlic, Finely Chopped
  • 4 Tablespoons Olive or Avocado Oil (Divided)
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Onion Powder
  • 1 Tablespoon Sea Salt (Divided)
  • 1/2 Teaspoon Freshly Ground Black Pepper (Divided)
  • 2 Tablespoons Butter or Ghee
  • Fresh Rosemary or Thyme
  1. Preheat Oven to 425 degrees and bring steaks out to bring to room temperature (at least 30 minutes).
  2. Wash green beans and cut stems off if needed. Pat dry.
  3. Chop garlic into fine pieces.
  4. Spread green beans and 3/4 of garlic onto a large cookie sheet (remember not to crowd your beans). Drizzle with about 2 tablespoons of olive or avocado oil. Make sure beans and garlic are well coated but not swimming in oil.
  5. Place green beans in a preheated oven for 17-22 minutes. Make sure to toss once in the middle of cooking so they blister evenly.
  6. Heat your cast iron skillet to medium-high. Lower the temperature slightly if you prefer a more well-done steak. Add 2 tablespoons of olive or avocado oil to your skillet and let warm up. Meanwhile, pat dry your steaks and season each side liberally with your sea salt, pepper, garlic, and onion powder.
  7. Once pan is hot, delicately place steaks in skillet and leave them undisturbed for 3-5 minutes depending on desired doneness. This will also vary depending on the thickness of your steaks. If your steaks are very thick, turn heat down a bit to make sure your desired doneness is achieved.
  8. Flip Steaks gently and make sure oil is underneath each steak when flipped so they sear and do not stick. Sear for 3-5 more minutes depending on desired temperature. Add butter, garlic, and herbs the last minute and spoon over steak to baste. Once perfectly seared, remove steaks from pan and let rest for 5 minutes for juices to redistribute. Pour a little of the butter/ghee and herb mixture over each steak.
  9. Once beans are slightly charred in some areas and garlic is golden, remove from oven and plate with steaks. Season with a little extra salt and pepper and a squeeze of lemon if you wish.
  10. Enjoy each delectable bight!

This is a great meal for busy nights as it is fairly quick to prepare and cook. Preheating and bringing steaks to room temperature takes more time than the actual cooking. We like to keep meals simple with one or two sides. Add mushrooms and onions for a true steakhouse feel, or pair with a side salad or sourdough to soak up the extra juices from your sirloin.
